Well It’s been a while since I posted anything. It has been a couple of years since I posted anything. Alot has happened to me and my family, from medical issues to deaths. I hope to start posting again soon.

Checking your Glucose
So this is not a recipe post but one for my fellow Type II’s out there. So as you know monitoring glucose is a day choir we do as a diabetic. for many of use it involves pricking our finger, using strips and a meter to check our sugar levels. It is not fun but a part of our lives now. In many cases we have to do this multiple times a day. This can also be painful and starts getting expensive for the cost of supplies that are needed. Not only you have to carry this stuff around with you and take the time to do your checks.
Well my Dr. turned me on to another way of checking my sugar levels. I don’t have to remember to carry anything else but my smartphone. This was a game changer for me, because before what he prescribed I was horrible at checking my glucose levels. Not only doing it once a day, there were weeks in between checking my glucose level. This is not a good thing to be neglecting to do for a diabetic.
So here it in FreeStyle Libre 14day this is a sensor that place in a area on the back side of your upper arm and is active for 14days. I now don’t have to remember to keep all my strips, lances and reader with me. You also wont have to prick you fingers several time a day. I now just open the app on my phone and take a reading. With the app on your phone it gives you get a great visualization of what is going on with your glucose levels. It can show you line and bar grafts so you can see what your levels are doing throughout the day.

Simple Easy Breakfast idea
2-Frozen Sausage paddies, 2-Eggs, 1-sliceAmerican Cheese and Frank’s RED Hot Sause.
For this mornings breakfast I used my Pampered Chief Breakfast sandwich maker (No longer offered) to cook my meal in but if you don’t have one no big deal. Total cook time for me was about 3 minutes. If you have the breakfast sandwich maker I placed a sausage paddy in each of the silicone baskets and cooked in the microwave on high for 1 1/2min. Then I scrambled 2 eggs and put them in the porcelain bowl that I had spayed with some canola oil. I place everything back into the sandwich maker and cooked for another 1 1/2min.
Once done I placed one sausage paddy on the plate layering with my egg paddy slice of American cheese, a little Frank’s RED Hot sauce and topping it off with the other sausage paddy.
Quick, simple and easy breakfast
If you don’t have a breakfast sandwich maker there is another way. You can cook the sausage paddies on a plate per their instructions. For the egg paddy I have use a larger microwave safe coffee mug. Spray some cooking oil in the mug add mixed eggs and cook in microwave for 1 1/2min on high.

Eating Better
One of the biggest thing I have done to help is to eat better by cutting out carbs and sugars. By this I mean bye bye bread and sugary sweats, the things had I loved best. But what is more important, unhealthy food or being alive? I choose life! I will be posting recipes that I have found and are healthier alternatives that can sooth some of those sweat cravings. Examples Cheesecake, corn bread & chili and even banana bread. More to come!!!

I have been struggling with my weight for about 20yrs now. Back in Aug 2020 I had a very big eye opener from my doctor that has motivated me to make some changes in my life.
